Roasted Sweet Potato Chipotle Bowl
🔸2 large Wellsley Farms Sweet Potatoes (about 1.5 lbs.), diced (about 6 cups)
🔸2 tbsp organic olive oil
🔸1/2 tsp Wellsley Farms Veggie Blend Seasoning
🔸1 packet of Loma Linda Chipotle Bowl
🔸1/2 cup organic arugula
1. Preheat the oven to 400 degrees F. Peel and chop the sweet potatoes into small, bite-
sized pieces. Place on a sheet pan and toss with the olive oil and veggie blend seasoning. Toss
ingredients together and place in the oven. Roast for 10 minutes, remove and stir around, and
return to the oven for another 7-10 minutes or until crisp-tender. Remove the tray of potatoes
from the oven and set aside.
2. Prepare chipotle bowl packet according to directions on the packet.
3. Add a handful of arugula to each bowl.
