Chicken steak

Chicken steak topped with a luxuriously buttery and creamy cheese sauce. This was a spur of the moment thing. I felt like doing something easy for dinner that didn’t take a lot of time. So I just seasoned the chicken breast with salt and pepper and cooked it in a pan with a knob of butter. Maybe 7 minutes on each side as I didn’t flatten it first so it was still quite thick. If you flatten the chicken with a mallet, it will need less cooking time. (The chicken is best when it’s still juicy. When you overcook you run the risk of making it rubbery) But the star of the show is the cheese sauce. It is a must try. I’m certain it will go well with beef too. *Ingredients for the sauce: 1 TBS butter 2 TBS olive oil 3 garlic cloves, minced 1 TBS plain flour 1 cup chicken broth 1/2 cup double cream Salt and pepper to taste 1 TBS cream cheese 80g shredded or chopped cheddar (I used red Leicester and chedder) 1 TBS grated parmesan *Method: Heat butter and olive oil in a non stick saucepan. Add the garlic and fry for 1-2 mins. Add the flour and keep stirring for 1-2 mins. Add the broth and double cream. Keep stirring until thick and bubbling slightly. Add salt and pepper if needed (the cheese is salty so keep that in mind). Turn off heat and add all the cheeses, stirring so that they are dissolved. Check for seasoning and adjust if necessary.
I served over chicken steaks with chips and blanched tender stem broccoli and fine green beans – accompanied by a delicious berry smoothie made by my daughter @tokillacraving ♥️
