Vegan Mediterranean White Bean Soup(Kuru Fasulye)!
It’s a delicious hearty and comforting winter menu. Also healthful with protein-carb balance. Especially, you can create an incredible menu if you pair with pickles and rice!
👉🏻 It is important soaking beans into water with 1-2tbs cider vinegar for 12-24 hours to remove lectins that humans can’t digest.
🔸Rinse the beans waited in water. Put them into a pot. Add a chopped onion, salt, water and cook them together.
🔸Roast tomatoes and tomato paste together in a pan.
🔸Once beans cooked , add tomato sauce you roast into the pot and let them combine. Boil for a couple minutes and turn the heat off. Drizzle olive oil.
🔸Top with pul biber and fresh mint.
