Some good news! After watching every single show on Netflix, we discovered Cobra Kai is back! Hooray. 2021 can now commence! Today I’m sharing lasts nights dinner. I completely forgot about this recipe but it went down a total treat. I’ve made up an amazing way to spice up your greens. Omg your taste buds are not going to know what hit them.

4 chicken breast 8 rashers of bacon 2 large carrots, peeled & sliced 1½ tbsp red wine vinegar 1½ tsp sweet or hot smoked paprika 1½ tsp garlic granules 2 tbsp Worcestershire sauce 2 x 400g cans chopped tomatoes 1 onion, chopped 1 tbsp tomato purée Mozzarella balls
1. Preheat your oven to 200°C. Fry the chopped onion in a sauce pan, when the onion looks translucent, then add the vinegar, tomato purée, paprika, garlic granules, Worcestershire sauce and chopped tomatoes bring to a simmer and cook for 20 minutes, stirring occasionally. Season to taste. 2. Whilst the sauce is cooking, wrap two pieces of bacon around the chicken breast. 3. Place the chopped carrots on the bottom of the casserole dish, add the chicken on top and then pour the sauce on top of the chicken. Tear off mozzarella and scatter on top (I didn’t add cheese to this recipe as the kids are on cheese strike🤣)Put into the oven and cook for 30 minutes until the chicken is cooked throughout. 4. Serve with black garlic greens (recipe coming tomorrow) & roasted root veg.
