You can also change it up by adding any other veggies of your choice to the chickpeas! ​ ​Sweet and sour chickpeas 1 medium red onion, chopped 2 cloves garlic, minced 2 cups oyster mushrooms 1 can chickpeas, drained and rinsed 2 tbsp tamari 2 tbsp rice vinegar 1 tbsp maple syrup 1/4 cup water 1 tbsp cornstarch ​ Sauté the onion and the garlic in a non-stick frying pan for a couple of minutes. When they soften, add the oyster mushrooms and continue to cook until they soften, which takes around 5 minutes. Next, add the chickpeas, tamari, rice vinegar, maple syrup, water and cornstarch.
